I have a couple of Hitachi generators off 400 motors.Don’t know if they’re any good or not.Being a complete Nob regarding electrical stuff how can I determine if they’re any good?

The acid test is will they make an engine run...
A resistance check gives an indication but other than an acid test, a mega tester is needed to check for insulation break down. Even a mega tester, a dangerous bit of kit in the wrong hands, does not really test the stator in real life conditions, unless the stator is warmed up to engine running temperatures, which can show up make and break contacts in the coils.
Any cracks in the epoxy covering can take out coil wires, then thin, and very thin candy floss sized wires.
Acv outputs on a running engine are important as an engine can start well, run well, and when up to temp, refuse/misbehave to review over 4 to 5 k revs due to insulation breakdown.
An acid test is the ultimate test.
Charging system coils are guitar robust, ign wires and coils are fragile by comparison.
Multimeter for Res and acv, red neons for "HT loss", a scope and mega being the ultimate, but they are quite expensive.
