How do you remove the seat and tank to do an air filter change? ? Thank you

run your fingers under the sides of the seat, you'll find a couple of levers (bit like a car bonnet) they release the seat. you can then get to the air filter

Once the seat is off take the 3 screws out of the cover and you have access to the filter.
Have you got a Haynes manual? If not, get one as it will be of good use. Not expensive on ebay.

A cautionary tale of following the Haynes advice.
About 40 years ago (I was 18) I followed the bit about adjusting the cam chain dynamically. It was perfect before and sounded like a bag of nails after! Now my advice to anyone is do it statically. Still, it was good experience stripping down, replacing and rebuilding.
